Creamy Brown Lentil Dahl (Vegan & Gluten-Free)
This creamy Brown Lentil Dahl is a perfect speedy mid-week meal that is simply perfect for when the soul craves a taste of home and warmth.
Soak lentils in hot water in a bowl. In a pot sauté the onions for five minutes, then add the ginger, garlic, carrots and peppers, and sauté for 2 minutes.
Add the soaked and washed lentils, bouillon cubes, spices, water, coconut milk, and salt to taste.
Allowed to boil for 2 minutes, and then simmer for 10 to 15 minutes.
Enjoy with a side of warm rice or quinoa.
Garnish with herbs like cilantro or parsley.
