Start by making your dough. In a bowl, add and mix the chopped spinach, cubed onion, olive oil, sumac, seven spices or all spice, ground kamooni or cumin, lemon or citric acid, and salt.
Place the filling mixture onto the center of the dough then fold in from the top and bottom. Fold over the dough ends from the longer side of the dough on top of each other to close the pie securing tight and gently pressing down.
Place in preheated over for 10-12 minutes, then broil on high until golden.Allow to cool, then slice your desired size pockets.
