Cajun Sweet Potato Rice Bowl

Ingredients

  • 2 sweet potatoes cubed
  • 1 tablespoon olive oil
  • ½ tablespoon cajun seasoning
  • 1 onion cubed
  • 1 cup mixed peppers diced
  • ¼ cup corn drained
  • ½ hass avocado sliced or cubed
  • 1 cup cooked rice
  • salt and pepper to taste

Tahini Dressing

  • ¼ cup tahini paste
  • ¾ cup plain yogurt *VEGAN Yogurt for vegans
  • ¾ cup lemon juice
  • 1 garlic clove minced
  • salt to taste

Instructions

  • Preheat oven to 400°F. 
  • Place parchment paper on a baking sheet and spray with cooking spray.
  • Place the peeled and cubed sweet potatoes, onions, and peppers on the baking sheet; then bake for 15-18 minutes. ⁣⁣
  • Meanwhile, cook rice according to instructions then place in serving bowl. 
  • Begin assembling the bowl by adding the baked potatoes, onions, peppers, mixed greens, corn, and sliced avocado. 
  • For the tahini dressing, mix all ingredients in a bowl.
  • Top with tahini sauce, then garnish with cilantro and a sprinkle of Cajun seasoning.

Tips for Perfect Results
  1. Chop the sweet potatoes in chunks of the same size (no longer than half an inch), and place them as a single layer on the baking sheet. Chopped potato cubes will guarantee even cooking.
  2. If it’s your first time making this recipe, I would recommend sticking to the instructions in the recipe card. But remember, you can also adjust the seasoning to your liking.
  3. Feel free to use fresh corn, corn on the cob, or canned corn like I did! It is all really up to you and what you have available in your kitchen!
