Tender Slow Cooked Roast Beef

Ingredients

For the Rub

  • 6 pounds roast
  • 6 tablespoons olive oil or avocado oil, divided
  • 1 tablespoon white pepper
  • 1 tablespoon 7 spices or all spice
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 tablespoon salt

For the Slow Cooker

  • 3 bouillon cubes optional
  • 2 small cinnamon sticks
  • 5-6 cloves
  • 2 anise star
  • 2 carrots largely chopped
  • 2 onions largely chopped
  • 2 potatoes largely chopped

Instructions

  • In a small bowl mix together the white pepper, seven spices (or all spice), paprika, garlic powder, onion powder, black pepper, and salt. 
  • Place the roast on a large tray then drizzle 3 tablespoons of olive oil all over the roast beef and rub.
  • Use half of the spice mixture and rub using your hand (I wore a glove), the whole roast including the creases. 
  • In a large skillet, heat oil on medium-high heat. Now, add in the remaining 3 tablespoons of olive oil. Flash-sear the roast to brown for about 2 minutes on each side. 
  • Add the remaining half of the spices to the bottom of the slow cooker then place the roast into the slow cooker. You can add the spices before you add the roast or after, both ways are find so it is your choice.
  • Place the bouillon cubes around the roast. This step is optional.
  • In the same skillet and using the leftover drippings, add in the cloves, anise star, cinnamon sticks, cubed onions, and the cut carrots on high heat. Sauté for about 5-6 minutes until onions are slightly browned and spices are fragrant. 
  • Place the sautéed onions and spices over the roast. Add in the raw cubed potatoes and cubed tomato then cover and slow cook for 6 hours on high heat.

Notes

  1. Prep your ingredients the night before. Place the chopped vegetables in containers in the fridge, have all of the spices ready, and enjoy a stress-free cooking session the following day.
  2. Mix things up by adding your favorite vegetables to the slow cooker. In addition to the carrots, tomatoes, and onions I mentioned in the recipe, you can add broccoli, Brussels sprouts, winter greens, or even cauliflower.
  3. Give additional earthy flavors to your roast beef by adding dried lime, rosemary, cardamom, and bay leaves into the slow cooker.
  4. Don't be stingy with your seasoning. Remember that it is not a matter of getting a perfectly seasoned roast, you don't want your vegetables to taste bland. As per salt, add it according to your own preference.
  5. When rubbing the seasoning mix onto the roast, make sure you get into the creases of the meat. This enhances flavor and ensures every bite of the roast packs a taste that will linger!
 
GRAVY
Take 2 cups of the beef stock and place it in a pot on medium heat. In a small bowl, add 2 tablespoons of starch and mix with ¼ cup cold water until the starch dissolves then pour into the pot on high heat and mix until gravy has thickened. Add salt and a pinch of all spice.
