- 1 teaspoon ground cumin seeds , roasted* 2 cups cilantro leaves, (roughly chopped)
- 2 cups cilantro leaves roughly chopped
- 1 tablespoon honey or sugar optional
- ½ cup mint leaves
- 1 inch ginger knob
- 4 garlic cloves
- 2 green chillies
- 1 lime or lemon juice
- ½ teaspoon salt
- 1 cup plain yogurt
To a blender add the yogurt, washed chopped cilantro, mint leaves, garlic cloves, cumin, honey or sugar (optional), lemon or lime, and salt.
Blend until consistency is smooth then add in the green chillies and blend some more.
You can add a little bit more yogurt based on the desired consistency.
- Use ice cold water when you blend the ingredients. This will ensure that your green chutney will have a vibrant green color.
- Be careful not to over mixing the chutney. Overmixing might result in a bitter flavor.
- Refrigerate your chutney as soon as you make it if you don't plan to use it. This will help keep it bright green.
- Don't skip the lemon juice. Lemon juice helps maintain its bright green color.
- Use only the cilantro and mint leaves. The addition of stems can give the chutney a bitter taste.
