Ingredients

  • 2 ½ cups almond flour blanched
  • 2 eggs
  • ¼ cup coconut brown sugar or replace it with honey
  • ¼ cup honey
  • ¼ cup coconut oil melted
  • 1 teaspoon baking powder
  • ½ cup chocolate chips
  • 2 teaspoons vanilla extract

Instructions

  • Preheat oven to 350°F
  • Line a cookie sheet with parchment paper
  • In a bowl add the coconut oil, honey, coconut brown sugar, eggs, vanilla and whisk together.  Clean the whisk off with a spatula then add in the almond flour, baking powder and mix all together using a spatula until well combined.
  • Fold in the chocolate chips until well combined.
  • Using a spoon, scoop out dough and place a large spoonful on parchment paper.  The dough may be a tad sticky, you can use your fingers to slide the dough down onto the baking sheet.
  • Bake between 13-15 minutes or until done.  Dough will be soft, so allow the cookies to cool for 10 minutes.

Notes

  • To prevent the cookies from spreading too much during baking, place the dough in the refrigerator for 30 minutes.
  • Keep the butter out at room temperature until it becomes soft but not melted. By spreading out, the cookies become soft and chewy rather than round and cake-like.
  • After taking the cookies out of the oven, let them cool for a while. If you move them to a cooling rack too soon after cooking, they could break because they are so delicate when hot.
