Meat and Veggie Wellington Roll

Ingredients

  • 2 Puff Pastry Sheets
  • 1 lb ground meat
  • 5 tablespoons olive oil
  • 1 stalk celery finely chopped
  • 1 medium carrot finely chopped
  • 1 small potato finely chopped
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 rosemary stick
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¾ tablespoon salt
  • ½ cup shredded triple cheese or cheese of choice
  • 1 egg

Instructions

  • Preheat oven to 350°F
  • In a medium size pan, add 5 tablespoons of olive oil, or oil of choice, on medium heat. Add the finely chopped onion, celery, potato, carrot and rosemary stick. Sauté for about 5 minutes, or until the veggies are slightly cooked.
  • In a bowl, add the minced meat, the cooked veggies, garlic, cumin, chili, garlic powder, black pepper, salt, and half of an egg, and mix well.
  • On a clean counter top, roll out the puff pastry so that it is about the size of a small kitchen towel. Place half of the meat mixture onto one side of the pastry and mold into a block.
  • Brush the remaining egg wash on the sides of the puff pastry. Begin rolling all the way. Tuck in the sides of the pastry and pinch in. Brush the top of the roll with egg wash. This recipes makes 2 puff pastry rolls.
  • Bake for 1 hour. Allow to rest for 10 minutes before cutting and serving.

Notes

  1. If you are craving the golden crust but are not a fan of egg wash, then use non-dairy milk or mustard! This will add golden complexity to the finished product.
  2. Add mushroom to your Meat and Veggie Wellington Roll for extra flavor. You might even want to play around with your veggie to see what satisfies your taste buds.
  3. If you feel the need to roll your pastry sheet, then do it gently with your hands instead of a rolling pin.
