Ingredients

Greek dressing ingredients

  • ½ cup red wine vinegar
  • 1 cup olive oil
  • 4 cloves garlic minced
  • 1 medium lemon for juice
  • 1 teaspoon dried basil
  • 2 teaspoons Dijon mustard
  • 4 tablespoons plain yogurt
  • 1 teaspoon sugar
  • 2 tablespoons dried oregano
  • teaspoon black pepper
  • ½ teaspoon salt to taste

Salad ingredients

  • 3 cups Romaine lettuce or iceberg lettuce
  • 3 tablespoons red onions thinly sliced
  • ¼ cup tomato cubed
  • 4 tablespoons feta cheese
  • 4-6 whole golden Greek pepperoncini
  • 8-10 Greek Kalamata olives

For the Greek chicken

Instructions

  • To prepare the Greek salad dressing, put the olive oil, vinegar, minced garlic, fresh lemon juice, dried basil, mustard, yogurt, sugar, dried oregano, black pepper, and salt in a mason jar.
  • Whisk them until well combined.
  • To prepare the chicken, use the dressing you prepared to get a Greek marinade.
  • Marinate the chicken breasts or chicken thighs for as long as possible. The longer it marinates, the better. You can use it right away if you do not have time.
  • Sear the chicken on medium-high heat for about 4-5 minutes on each side or until cooked.
  • Let the chicken rest on a cutting board and come to room temperature before slicing.
  • Meanwhile, prepare the salad. Set the Romain Lettuce or iceberg lettuce in a large bowl, then top it with cucumbers, tomatoes, red onions, feta cheese, golden Greek pepperoncini, and Greek Kalamata olives.
  • Finally, on top of the salad place the chicken slices and the dressing.
  • Serve and enjoy!

Notes

Tip 1: Double or triple the ingredients of the dressing recipe and keep them in mason jars in the fridge or freezer. You can take them out whenever you need a quick marinade for chicken or a delicious dressing for a bowl of Greek salad.
Tip 2: If you do not want to make a salad, you can use the same dressing ingredients to make a Greek chicken marinade. Marinate and grill the chicken. Serve as a main dish. This may become your go-to chicken recipe! 
Tip 3: You can place the chicken and the marinade in an airtight container or a large resealable plastic bag. Shake until chicken is well coated.
