No-Bake, Pumpkin Spice Energy Balls

Ingredients

  • 1 cup peanut butter or Almond butter
  • ½ cup pumpkin purée
  • 1 ½ tablespoons vanilla extract
  • ½ cup honey or Maple syrup
  • 1 ¾ cups rolled oats or Gluten-free oats
  • ¼ cup chia seed
  • 1 tablespoons pumpkin spice
  • ¼ cup chocolate chips or Dairy-free chocolate chips

Instructions

  • In a medium bowl, add the peanut butter, pumpkin puree, honey, vanilla extract.
  • Mix these ingredients well until they become combined.
  • Then, add the rolled oats, chia seeds, chocolate chips, and pumpkin spice to the bowl.
  • Mix them all again till you get a uniform dough. Add a little more oats if the dough is sticky.
  • Prepare a baking sheet, and lightly spray it with cooking oil spray.
  • Next, using your desired size ice cream scooper, scoop the dough into small balls, and place them onto the baking sheet.
  • Place the balls in the freezer for 20 minutes to firm up and enjoy.

Notes

Did you know that you can reshape the balls to make energy bars? All you need to do is to shape them into into rectangular bars instead of balls.
You can also convert this recipe to a flaxseed meal by replacing chia seeds with flaxseed.
If you have more of a sweet tooth, you may coat a big batch of these blissful balls with your favorite covering. For instance, you can dip them in melted chocolate or shredded coconut flakes.
You can consume the balls within a week of preparation if you store them in the refrigerator, but if you keep them in the freezer, they remain good for a month.
