Ingredients

  • ½ 16 oz Frozen Spinach Thawed
  • 2 8 oz Cream cheese room temperature
  • 1 Tablespoon melted butter optional
  • 1 cup artichoke hearts marinated
  • ½ cup water
  • ½ cup Mozzarella cheese divided
  • ½ teaspoon salt and black pepper

Instructions

  • Preheat oven to 350°F
  • In a large bowl, add the room temperature cream cheese, and mix using a spoon until smooth. Add 1 tablespoon melted butter, frozen spinach (defrosted and water completely squeezed out), 1/2 cup water, half the amount of mozzarella cheese, little salt, and black pepper.
  • Cut the artichoke hearts in half, then add them to the bowl. Mix all the ingredients together until well combined.
  • Place in a 5x10 baking dish or any one that fits. Sprinkle the rest of mozzarella cheese on top.
  • Bake for 20-25 minutes, then broil on high for 2 minutes. Serve warm with pita chips.

Tips for Perfect Results
  1. For bold flavors, sauté fresh garlic cloves in olive oil before adding them to the mix. You can also use garlic powder. It adds so much flavor.
  2. If you are into a little heat, drop some red pepper flakes to the mix. You can also add a pinch of salt if you feel like the overall taste needs some.
  3. Substitute the cream cheese with Neufchâtel cheese, found in your local grocery store! It is lower in fat and tastes the same. You can use chive cream cheese too for extra flavor.
