Gluten-Free Almond Flour Banana Cake

Ingredients

  • 3 bananas ripe and mashed
  • 2 tablespoons milk Choose any kind.
  • 2 eggs
  • ½ cup olive oil or melted coconut oil
  • ¾ cup honey or white, brown, or date sugar
  • 3 cups almond flour
  • teaspoons baking soda
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ½ cup chocolate chips optional

Instructions

  • First, preheat the oven to 325°F.
  • Then, grease a 9x5-inch loaf pan.
  • Mix the flour, baking powder, baking soda, and salt in a bowl.
  • After that, mash the bananas, and then whisk in the milk, oil, honey, and eggs.
  • Add the ground cinnamon. Mix well, and then fold in the chocolate chips.
  • Pour the batter into the prepared loaf pan greased with cooking oil spray.
  • Then, bake the cake in the preheated oven for 70 minutes.
  • Cool it in the pan for 10 minutes before removing it to cool completely on a wire rack and finally slicing it.
  • This step is optional.
    Instead of adding the chocolate chips into the batter, melt them with 1/2 teaspoon coconut oil for 45 seconds in the microwave, stirring every 15 seconds. Drizzle the melted blend over the whole cake or per piece.

Notes

If you want to store the cake in the fridge or freezer, let it cool completely before doing so.
You can add a quarter teaspoon of vanilla extract to the wet ingredients to reinforce the taste.
Use maple syrup as an alternative, healthy sweetener.
Finally, enjoy eating almond-flour banana cake  with pumpkin spice latte or dark coffee.
