No Bake Marshmallow Crunch Cookies

These no bake Marshmallow Rice Krispy Cookies are ridiculously melt-in-your mouth good whether warm or cooled!  They are soft and chewy and come together in 5 minutes!!

Ingredients

  • 1⅓ cup chocolate chips
  • 1 cup marshmallow
  • 1 cup rice Krispies
  • 1 teaspoon coconut oil
  • ½ teaspoon vanilla extract

Instructions

  • First, line your cookie tray with wax paper or parchment paper.
  • Then, in a medium bowl add the chocolate chips, coconut oil, and vanilla extract.
  • Microwave for 30 seconds, mixing halfway.
  • After that, add the marshmallows and microwave in a large microwave-safe bowl for another 60 seconds, mixing half every 15 seconds.
  • Next, mix in the rice Krispies until they are well combined. 
  • Finally, oil your hands with a little bit of coconut oil then begin to shape into circular-shaped cookies. It should make you about 5 cookies.
  • Enjoy them warm as marshmallows stretch or when cooled.

Notes

Helpful Tips:
Vanilla extract can be substituted but the effect it has on your cookies can’t be found anywhere else! What it does is that it creates a balance in the flavor of your cookies and intensifies the chocolate flavor.
It is essential to cover your hands with coconut oil before you start shaping your cookies. It prevents them from sticking on your hands and gives them a neater look.
Instead of microwaving, feel free to use a double boiler.
