Chicken Sub Sandwich with Garlic Aioli Sauce

Ingredients

  • 2 pounds chicken breast diced small
  • ¼ cup mayonnaise
  • 3 tablespoons ketchup
  • 3 tablespoons white vinegar
  • 4 tablespoons olive oil divided
  • tablespoon cumin
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • ½ bunch parsley finely chopped
  • 2 teaspoon salt
  • 6 sub rolls

Aoili Garlic Sauce

  • ½ cup mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 garlic cloves minced
  • teaspoon salt

Toppings

  • Aioli sauce
  • Tomato sliced
  • pickles
  • jalapeño
  • lettuce shredded

Instructions

  • In a medium skillet on medium heat, sear the cubed chicken with olive oil, stirring continuously for about eight minutes or until the chicken has cooked.
  • Once the chicken is cooked, turn off the heat and drain out any excess water. Keep the chicken in the skillet.
  • In a mixing bowl, combine mayonnaise with the remaining 2 tablespoons of olive oil, white vinegar, ketchup, cumin, garlic powder, paprika, salt, and chopped parsley.
  • Assemble the sub bread with a spread of aioli sauce, chicken, lettuce, tomatoes, and pickles. Toast your sub and enjoy warm!

Aioli Sauce

  • In a small bowl, mix the mayonnaise, olive oil, lemon juice, minced garlic, and salt until well combined.
  • The sauce is ready to use as a dip or with your favorite sandwiches.

Notes

If you’re cooking a full chicken breast, make sure to poke holes in it to allow it to cook all the way through.
It’s always a great idea to let your sauce chill in the fridge to allow the flavors to combine together.
For a little spicy take, you could add sriracha sauce.
