Avocado Cream Cheese Veggie Bites

Ingredients

  • 2 Hass Avocados
  • 2 ounces cream cheese softened
  • 2 tablespoons chives chopped
  • teaspoon black pepper
  • 1 tablespoon everything but the bagel seasoning
  • 1 English Cucumber
  • 6 mini peppers

Instructions

  • In a medium bowl mash 2 Hass avocados and 2 oz cream cheese ( at room temperature).
  • Once whipped add the finely chopped chives, you can use kitchen scissors, black pepper and salt if needed.
  • Slice the cucumbers and set aside, then cut the mini peppers in half, remove the inside seeds and stem using a knife.
  • Now begin to fill the gutted mini peppers with the whipped avocado cream cheese. Top the sliced cucumbers as well. Sprinkle a generous amount of everything, but the bagel seasoning on top. Enjoy!

Notes

Variations: Swap the chives for green chiles or jalapenos and chopped cilantro to make spicy avocado cream cheese bites.
Storage: After preparing, keep refrigerated until ready to serve. They should be stored in a single layer on a baking sheet or tray that has been lightly covered.
Refrigerate leftovers in a single layer for up to two days.
Make ahead: I recommend slicing the pepper and cucumber bites on the same day. You can make the avocado cream cheese mixture up to three days ahead of time to save time. Refrigerate it in an airtight container until ready to use with the cucumber.
