Croutons:

Bread Pizza

  • sliced pieces of bread
  • milk only if the bread is not fresh
  • tomato puree
  • mozzarella cheese
  • grated parmesan cheese

Italian Bread Crumbs

  • large pieces of bread
  • parsley
  • basil
  • oregano
  • thyme
  • garlic powder
  • salt

Instructions

Croutons

  • Combine tiny cubes of stale bread with your preferred dried herbs and spices, nutritional yeast or vegan parmesan in a small amount of olive oil. The options can be oregano, paprika and garlic powder.
  • On a baking sheet, arrange the cubes in a single layer and bake for only ten minutes or so.

Bread Pudding

  • Break up the bread into small pieces, and then drizzle some melted butter on top and add raisins.
  • Combine the eggs, milk, sugar, cinnamon, and vanilla in a medium mixing dish. Mix thoroughly after beating.
  • Pour the egg mixture over the bread and gently press down so that it covers and soaks up the egg mixture.
  • Bake in the preheated oven at 350 F for 45 minutes.
  • Serve with ice cream, fresh cream or vanilla custard.

Bread Pizza

  • Slice pieces of stale bread in half and place on a baking sheet.
  • To soften the bread, lightly brush it with milk. This step can be skipped if the bread is fresh.
  • Spread tomato puree on each slice of bread.
  • Sprinkle with mozzarella cheese shredded.
  • Add some grated Parmesan cheese.
  • Spread olive oil on all the bread.
  • For about 20 minutes, bake at 180 C until the cheese is melted and brown.

Italian Bread Crumbs

  • Cut stale bread into large pieces and place them in a large food processor or blender.
  • Combine dried parsley, basil, oregano, and thyme with garlic powder, salt and pepper.
  • Process the bread until fine crumbs form.
  • You may either use the breadcrumbs right away in a dish or freeze them in an airtight container for later use.
