Ingredients

To bake Salmon

  • 1 whole salmon filet or 5-6 pieces of 7 oz fillets
  • ¼ olive oil
  • ½ cup lemon juice
  • 2 tablespoons Cajun spice
  • 1 tablespoon paprika
  • salt to taste

To prepare Tahini Sauce or Salad

  • ¾ cup mayonnaise
  • 3 tablespoons tahini
  • 1 large lemon juice
  • ½ cup water
  • bunch parsley chopped
  • ½ green bell pepper diced small
  • ½ bell pepper, any color diced small
  • 1 large tomato cubed small
  • 4 stalks green onion chopped
  • teaspoon paprika
  • salt to taste
  • ½ teaspoon cajun seasoning

Instructions

To Bake Salmon

  • Preheat oven to 450°F. Wash your salmon and pat dry with paper towel.  Lay flat on an oil sprayed lined baking sheet.
  • Spray the entire salmon with oil spray or rub with ¼ cup olive oil, then pour the lemon all over the salmon filet.  Sprinkle the salmon with cajun seasoning, paprika and salt.  Close off the sides of the parchment paper over the salmon to lock in the lemon juice so the fish can absorb it all
  • Bake for 15 minutes or until cooked, for a flaky juicy salmon. Top it with my tahini salad, recipe below.

To Prepare Tahini Salsa

  • Whisk together the lemon, water and tahini, then add the mayo and keep whisking until creamy.  You can add another tablespoon of tahini to thicken the sauce.
  • Mix in the parsley, peppers, green onions, tomatoes, cajun, paprika and salt.
  • Serve and enjoy!

Notes

Note 1: Do not marinate salmon. Usually, we use marinade so the meat soaks the flavors. But salmon is a fragile fish and this recipe has an acidic marinade. A few minutes before setting the salmon in the oven are enough. You can leave it up to 30 minutes maximum. If you leave it for longer, the salmon may become mushy. It may fall apart!
Note 2: Make sure that you set salmon skin down on the baking sheet. If otherwise, the meat will stick to the sheet. When serving, it may fall apart and lose its amazing shape.
Note 3: Do not leave salmon in the oven to be overcooked. 15 minutes are enough. If you leave it for more, it will go from moist and silky to tough and dry.
Note 4: It is easy to check if your salmon is done. Simply, insert a fork or a knife in the salmon. Then, twist it a bit. The salmon should be opaque and flake easily.
