Creamy Brown Lentil Dahl (Vegan & Gluten-Free)

  • 3 cups brown lentil par boiled
  • 1 large onion diced
  • 4 gloves garlic minced
  • 1 tsp ginger ground or minced
  • 1 cup carrots diced
  • 1 cup mixed color pepper diced
  • 2 bouillon cubes
  • cups water
  • 1 can coconut milk 13.5 oz
  • turmeric
  • cumin
  • paprika
  • curry
  • salt


  • Soak lentils in hot water in a bowl. In a pot sauté the onions for five minutes, then add the ginger, garlic, carrots and peppers, and sauté for 2 minutes. 
  • Add the soaked and washed lentils, bouillon cubes, spices, water, coconut milk, and salt to taste. Allowed to boil for 2 minutes, and then simmer for 10 to 15 minutes. 
  • Enjoy with a side of warm rice or quinoa. Garnish with herbs like cilantro or parsley.
