Beef and Broccoli Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 1 lbs ground beef
  • 4 tablespoons olive oil divided
  • 1 large onion chopped
  • 1 large bell pepper, any color small cubed
  • 5 gloves garlic minced
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • 1 ½ cups broccoli florets
  • 2 tablespoons green onions chopped
  • ½ teaspoon salt

Instructions

  • Preheat oven at 450°F
  • Wash potatoes then brush with olive oil.  Poke the sweet potatoes with a fork, then place on a prepared baking sheet. Place the potatoes in the oven for 40- 50 minutes or until fully baked.
  • In a large skillet over medium-high heat add 2 tablespoons olive oil, sauté the chopped onions and bell peppers for about 2-3 minutes then add mined garlic, chili powder, salt, and cumin.
  • Now, add in the ground beef and cook for about 6-7 minutes, or until browned.
  • Flash boil the broccoli in boiling water for 3 minutes.  Drain then gently stir into the beef mixture.
  • Cut the sweet potatoes through the center lengthwise and fluff the flesh using a fork. Fill the potatoes with the beef mixture, garnish with green onions and enjoy!

Notes

Tip 1: It is better to choose medium or small sweet potatoes. It is a one-time serving, so it is better not to choose big potatoes. This way you will finish it all. If it is too big, you may end up with dishes filled with leftovers.
Tip 2: You can speed up the cooking process of the sweet potatoes. Prick all over the sweet potatoes with a fork. This will help the heat get inside the potatoes. It will also stop your potatoes from exploding in the oven.
Tip 3: You should not turn, flip, or rotate the potatoes. They will be cooked evenly. So, leave them be in the oven. They will cook perfectly.
Tip 4:Sometimes the sweet potatoes ooze a little bit. So, you can lay down a piece of parchment or aluminum foil on the pan when you bake the potatoes. This will make the clean-up easier.
