- 6 russet potatoes
- ¼ cup olive oil
- 1 tbsp. onion powder
- ¼ cup all-purpose flour
- ½ tbsp. salt
- 1 tsp cayenne pepper
- ½ tsp black pepper
- 1 tbsp dried oregano
- 2 cups milk
- 1 egg
- 2 vegetable or chicken bouillon cubes
- ¼ cup water hot
In a large bowl stir together the bouillon cubes and hot water until all is dissolved.
Pour in 2 cups of milk and 1 egg; and whisk well.
Peel and cut potatoes (you can most definitely leave the peel on ) into wedges then place into the bowl of milk to soak for about 20 minutes. Then drain and place in the same bowl again.
In a small bowl, combine the flour (you can choose to omit the flour) and spices listed, then slowly sprinkle onto the drained potatoes. Keep tossing until you have added in all the spice mix.
Place the seasoned potatoes on a prepared baking sheet and drizzle all over with olive oil.
Bake at 400 °F for about 35 minutes, or until the wedges are golden crisped and soft on the inside.
Expert Tips and Tricks
- Sprinkle some chili flakes or paprika onto your potato wedges if you prefer a subtle spicy bite.
- Toss your potato wedges in icy water for about an hour before you start your cooking process. This will remove the starch and allow you to enjoy tender wedges.
- Sprinkle some shredded cheddar cheese atop your potato wedges for a cheesy crunchy layer.
