For The Salad
- ½ Napa Cabbage or 1 small white cabbage. finely chopped
- 3-4 baby cucumbers or 1 large cucumber
- ¼ cup chives chopped
- 1 bundle green onions or Scallions chopped
For The Dressing
- 1 cup basil leaves
- 1 cup spinach leaves
- 1 hass avocado
- ⅓ cup plain yogurt optional
- 2 gloves garlic
- 1 small shallot
- juice of 2 lemons
- ¼ cup olive oil
- ¼ cup nuts of choice I used walnuts
- ⅓ cup nutritional yeast or parmesan cheese
- 1 tsp. salt
- 2 tbsp. rice vinegar
Finely chop cabbage of choice. I used Napa cabbage, but you can stick to the original way and use white cabbage. Then chop the cucumbers, green onions, and chives and place in a bowl.
To a blender add Basil, spinach, avocado, garlic, shallot, plain yogurt (optional), lemon, olive oil, walnuts, nutritional yeast or parmesan cheese, rice vinegar, and salt.
Blend for a few minutes until you have a creamy consistency. Get a taste and adjust salt to your liking.
Pour over the salad bowl and mix. Enjoy alone or with chips.
Tips For Perfect Results
- If you are making this salad ahead of time, then refrain from adding the avocado and plain yogurt until you are ready to consume.
-
Pour your dressing slowly so you don't end up with an overdressed salad. If you have extra dressing on hand, then use it as a dip with roasted or raw veggies.
- If you are allergic to nuts, then substitute your nuts with pumpkin seeds. The taste is literally mind-blowing!
-
Top your salad off with a sprinkle of sesame seeds for a nutty taste.
-
Nutritional yeast goes wonderfully with this recipe, but if you don't have any at hand, you can use parmesan cheese.
