Healthy Oatmeal Date Bars

Healthy Oatmeal Date Bars are your perfect choice for a healthy snack. A layer of sweet chewy dates sandwiched between two layers of delish crunchy oat crust will make your day!

Ingredients

  • 1 cup coconut oil or butter
  • 1 cup coconut brown sugar any brown sugar of choice
  • cup whole wheat flour or all purpose white flour
  • cup old fashion oats
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 13 oz pack date paste

Instructions

  • Preheat the oven at 375F and grease a 9x13 baking sheet with cooking oil spray.
  • Cream the coconut oil or butter and brown sugar with a whisk for about 1 minute.
  • Add the flour, baking soda, and salt. Mix with a spatula.
  • Add the oats and mix well. It will be a crumbly mixture but it will press together.
  • Sprinkle half the dough into the prepared baking pan.
  • Press down with your fingers or spatula to an even layer all across the pan bottom.
  • Spray hands with cooking oil spray. Now take the date mixture and mold it flat to form patches.
  • Gently press out the filling for a solid layer across the complete bottom of the crust.
  • Sprinkle the rest of the dough over the filling layer, and press down using a spatula. Bake for 25-30minutes. ⁣ Allow cooling for 20 -30 minutes before cutting.

Notes

Note 1: When you spread the date paste, the bottom layer of oatmeal may pull up. So, it is better to use your fingertips instead of a spatula.
Note 2: When you cut the tasty oatmeal bars, it may get messy. The crust may also fall apart. So, it is recommended to move the pan to the fridge for around 30 minutes for easy clean cutting.
Note 3: If you are cutting down your sugar intake, you can cut down the brown sugar. The dates are already sweet, so the sweetness in the oatmeal bars will be slightly affected.
