Ingredients

Dressing Ingredients

  • ½ cup extra virgin olive oil
  • ½ cup ride wine vinegar
  • 1 lemon juice large
  • 2 tap. minced garlic
  • 2 tsp. dried oregano
  • ½ tsp. dried thyme
  • ½ tsp. dried rosemary
  • ¼ tsp. salt to taste
  • ¼ tsp. black pepper
  • 1 tbsp. avocado mayonnaise or mayo of choice

Salad Ingredients

  • 8.8 oz pasta (1 package)
  • 2 celery stalks cubed
  • ½ cup pitted black olives sliced
  • 1 medium tomato cubed
  • 1 can corn drained
  • 1 can chickpeas drained
  • 3 radishes sliced
  • ½ cup purple cabbage medium chopped
  • 1 medium cucumber cubed
  • ½ green pepper cubed
  • ½ red pepper cubed
  • ½ yellow or orange pepper cubed
  • Feta Cheese to garnish

Instructions

  • Boil the pasta according to package directions, strain in a colander, then add to a salad bowl.
  • Add the celery, olives, tomatoes, corn, chickpeas, radish, purple cabbage, cucumbers, and feta cheese to your salad, and mix.
  • Prepare the salad dressing by whisking all of the dressing ingredients in a bowl. Place the dressing in the fridge to chill or use right away.
  • Drizzle the dressing over the salad, mix, and enjoy!

Notes

Tips for a Perfect Greek Pasta Salad
  1. If you are in a hurry, you can use 1 cup of bottled Greek Vinaigrette dressing instead of making your own dressing from scratch.
  2. Feel free to use any shape of pasta you prefer. I used lentil pasta, but any rotini pasta will work.
  3. If you have stored leftovers, make sure you have extra dressing at hand. You might find that your pasta is slightly dry, so an extra drizzle of dressing will bring your dish back to life!
  4. Cook your pasta until just past al dente. It is important that you don't overcook or undercook your pasta.
  5. Make sure you season the pasta properly. Unlike warm dishes, cold servings may mute the flavors; and thus require a lot more seasoning.
