Ingredients

  • 6 medium tomatoes quartered
  • 1 medium onion quartered
  • 4 medium carrots largely cubed
  • 4 medium potatoes largely cubed
  • 2 garlic cloves minced
  • 1 teaspoon Worcestershire
  • 1 teaspoon dried oregano
  • 2 cups heavy cream/milk almond milk for vegan
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 20 fresh basil leaves divided

Instructions

  • Add all the ingredients and half the amount of basil. Use heavy cream instead of milk for a richer soup or coconut milk, oatmilk for a vegan/dairy free version.
  • Set your pot for 12 minutes on the veggies mode.
  • Once they are cooked, add the remaining fresh basil the purée all the ingredients with an immersion blender until you have a creamy soup consistency.
  • If the soup is too thick, you can add some more warmed milk or heavy cream and mix till you get a perfect consistency.

Notes

Note 1If you do not want to use fresh tomatoes, you should not worry. You can use canned tomatoes. They give a thick texture since they usually can tomatoes at the peak of ripeness and freshness.
Note 2: For a more vibrant soup, you can add some butter. For a more intensified flavor, add a tablespoon of tomato paste. It is easier to puree the tomato soup right in the pot using an immersion blender. If you do not have one, you can move it in batch to the food processor. But you have to wait a little bit for the soup to cool down. Keep some headspace in the container.
Note 3: If you choose to freeze this amazingly rich tomato basil soup, allow it to thaw in the fridge before reheating. Then, set it in a pot at medium heat until warmed through.
