Healthy Protein Jam Bars

Eating breakfast has never looked this satisfying! These Homemade Protein Jam Bars are a perfect grab-and-go breakfast option, or a wholesome snack for you and your family!

Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • ¼ tsp. salt
  • 1 tsp. baking soda
  • ¾ cup coconut oil or unsalted butter melted
  • ¼ cup maple syrup
  • ¼ cup light brown sugar or coconut sugar packed
  • 2 tsp. pure vanilla extract
  • ¾ cup strawberry jam

Instructions

  • Preheat oven to 350°F. Line an 8×8 pan with parchment paper or cooking oil spray.
  • In a medium bowl, combine the dry ingredients consisting of flour, oats, salt, and baking soda.
  • In a small bowl, whisk the coconut oil or butter (melted), brown sugar, maple syrup or honey and vanilla until all is well combined. Pour over the dry ingredients, and mix well using a spatula.
  • Remove about 1 cup from the cookie dough and set aside. 
  • Place the remaining dough into the prepared pan and press it down using your hands until you have an even layer. Bake for 10 minutes. 
  • Remove from the oven, then spread the jam on top of the baked cookie.
  • Now sprinkle the remaining cup of cookie dough over the jam; then bake for about 14 minutes, or until the top is light golden brown.
  • Allow it to cool for about 15 minutes, then cut it into squares. Enjoy warm or cold.

Tips for Perfect Results!
  1. Use honey instead of maple syrup. This would also hold the mixture really well.
  2.  I recommend placing the bars in the fridge for a bit before serving. They are best served when chilled.
  3. If you have a sweet tooth like me, then add a dash of cinnamon to the mixture! That cinnamon-y aftertaste will do wonders to your taste buds!
