Ingredients

  • 6 rice cakes, unsalted
  • 1 cup chocolate chips, dark or milk chocolate
  • 1 tablespoon + ½ teaspoon coconut oil, used in parts
  • 2 tablespoons creamy peanut butter

Instructions

  • In a large bowl, crack by hand the rice cakes into smaller pieces about 1 inch.
  • In a small bowl, melt 1 cup of chocolate chips with 1 tablespoon coconut oil for 20 second in the microwave (stopping once in between to stir).
  • Pour the melted chocolate over the chunks of rice cakes and mix until well coated.
  • Place in a lined 8x8 pan and spread evenly.
  • In small bowl, melt 2 tablespoons of creamy peanut butter and 1/2 teaspoon coconut oil for about 10 seconds.
  • Using a spoon, drizzle the warm peanut butter over the chocolate rice cakes.
  • Enjoy right away or freeze for 30 minutes, cut and enjoy.

Notes

Another way of doing this recipe is by spreading peanut butter over 1 whole rice cake, then dipping that same side in luscious melted chocolate, placing it on a tray, and freezing it for 20-30 minutes.
