Brownie Baked Oatmeal (gluten free- Vegan)

- 2 cups milk or coconut milk or almond milk
- ½ cup maple syrup or honey
- ⅓ cup almond butter, or peanut butter
- 1 tsp. vanilla
- 2 cups rolled oats
- ¼ cup cacao
- 1 tsp. baking powder
- ½ tsp. salt
- ½ cup chocolate chips
Preheat oven to 350°F; then to a medium bowl, add milk of choice, maple syrup or honey, almond butter, vanilla and mix.
Add rolled oats, cacao, chocolate chips, baking powder, salt and mix again until well incorporated.
Spray a 9x13 baking dish with cooking oil, then pour the ingredients in. Gently stir the ingredients in the pan again, and spread out evenly.
Top with more chocolate chips if you desire, then bake for 40 minutes.
Allow to cool for10 minutes before scooping and enjoying!
Tips to Consider!
- Pay attention! If you are following a gluten-free diet, then using gluten-free old-fashioned oats is a must!
- For this recipe, I prefer using almond butter (or cashew butter) over peanut butter. Although they both work just fine, I would rather infuse my brownies with a rich chocolaty taste than a peanut butter one but if you love peanut butter, go for it!!
- If you are allergic to nut butters (almond and peanut butters), then substitute them with the same amount of WOWBUTTER or sun butter, or mashed banana or avocado.
