Grilled Chicken Sub Sandwich

A delicious take on a classic chicken sub sandwich that is packed with flavor and can be tailored to your liking.

  • 1 ½ pounds cubed chicken breast
  • 4 tablespoons olive oil or avocado oil
  • ¼ cup ketchup
  • 3 tablespoons mayonnaise or avocado mayo
  • 2 teaspoons paprika
  • ½ tablespoon cumin
  • 1 tablespoon garlic powder
  • 4-6 cloves garlic minced
  • ¼ cup garlic paste (optional or add more minced garlic)
  • ½ cup corn drained
  • salt to taste
  • 6 hoagies subs submarine


  • sliced tomatoes
  • pickles
  • jalapeño
  • banana peppers
  • shredded lettuce


  • In a large sauce pan, add the oil on medium high heat and sauté’ cubed chicken for about 6-8 minutes.
  • Remove off of heat then add ketchup, mayo, paprika, cumin, garlic powder, garlic cloves, garlic paste, corn, and salt. Mix and adjust taste. 
  • Remove the insides of your sub bun, then begin to assemble your sub.  Add in the chicken mixture and your favorite toppings. Toast in a panini press. Enjoy!
