SMALLER CLOUD BREAD
- 3 egg whites
- 3 tablespoons sugar or sugar free (fine monk fruit or fine xylitol)
- ½ tablespoon starch
- 1 tablespoon cacao
Preheat oven to 350°F.
In a large bowl add the egg whites. Using a hand mixer, or kitchen stand mixer, whip on high speed for about 2 minutes or until foamy.
Now, add the sugar (or honey) one spoon at a time, the cacao powder, and starch. Whip for about 3-4 more minutes, or until stiff peaks form and holds up.
Pour and pile high on a prepared baking sheet with parchment paper. Smooth and shape into a round high loaf shape.
Bake for 25-26 minutes. Enjoy!

- It is easier to separate your egg whites and yolks while it is cold. However, I would recommend beating them at room temperature.
