Vietnamese Pho Soup Recipe

Ingredients

For the soup

  • 12 cups beef broth 3 quarts
  • 12 ounces steak filet mignon
  • 1 package pho rice noodles fettuccini noodles
  • 2 bullion cubes
  • 1 medium yellow onion quartered
  • 4 cloves of garlic roughly minced
  • 3 whole star anise
  • 3 whole cloves
  • 1 (3-inch) knob of ginger thinly sliced
  • 1 cinnamon stick
  • salt to taste
  • pepper to taste

For Garnish

  • bean sprouts
  • fresh cilantro
  • fresh ginger slices
  • lime or lemon wedges
  • green onions thinly-chopped
  • jalapenos thinly-sliced
  • Thai basil

Instructions

  • In a large pot or instant pot, place the filet mignon with bullion cubes, onion, garlic, star anise, cloves, ginger, and cinnamon stick with at least 12 quarts water. Set on high for 1 hour. (If cooking on stove top cook for at least 1 hour since the meat needs time to tenderize)
  • Once the meat has cooked and the broth has infused, remove the beef into a small pot with some broth to keep it juicy.
  • Meanwhile, cook the noodles for about 3-4 minutes and then rinse them with cold water to stop the cooking. Drain and set them aside.
  • When you are ready to serve the soup, fill the bowl half way full with the cooked noodles, then scoop in broth to fill the bowl. Place desired amount of the cooked meat.
  • Then, begin to garnish bean sprouts, fresh cilantro, fresh ginger slices, lime or lemon wedges, thinly-chopped green onions, thinly-sliced jalapeños , Thai basil or basic basil.

Tip 1: For a deeper flavor, you can get the high-quality meaty bone broth. It is usually simmered with veggies, aromatic herbs, and seasonings for more than 20 hours to get that deep flavorful broth.
Tip 2: To make chicken pho soup, get chicken thighs since they are tender and juicier. They also absorb flavors better than chicken breast.
Tip 3: If you are using shrimp, you must peel, devein, and remove their tail before adding them to the soup.
Tip 4: Char the onions and ginger in an iron skillet. This will add a smoky taste from the onions and a warm, spicy, peppery taste from the ginger.
Tip 5: Use the spoon to sip the broth and the chopsticks to swirl the noodles and the steak slices.
