In a small bowl mix together the mint, lemon, and minced garlic. Set aside.
In a large pot add the ¾ cup oil, add largely cubed potatoes and sauté them on medium-high until golden brown. Remove them and set aside.
In the same pot with the remaining oil in it, add your chicken of choice, season on each side with salt and black pepper. Sear on medium high heat for about 4 minutes on each side.
Add 12 cups of water to the pot of seared chicken, add the 2 small cubed potatoes. Pour in half of the lemon and mint mix we have set aside. Bring pot to a boil then on on low heat for 35-40 minutes. Mash down the small potatoes to thicken up the broth.
Add in the largely cubed potatoes and the remaining mixture of mint, lemon, and garlic. Add salt and pepper to taste. Enjoy with a side of white rice!
