Lemon Mint Garlic Chicken Stew

This lemon mint garlic chicken stew recipe has a hearty, rustic flavor. The savory chicken broth is perfectly seasoned with potatoes and fresh mint. The chicken is super satisfying thanks to lemon juice and garlic infused with spices. It's incredibly simple to put this all together!

Ingredients

  • pounds chicken breast, thighs or drumsticks
  • ¾ cup avocado oil
  • 6 medium potatoes cubed in large pieces
  • 2 medium potatoes cubed in small pieces
  • 12 cups water
  • 15 cloves garlic
  • ½ cup dried mint
  • 6 lemons juiced
  • salt and black pepper to taste

Instructions

  • First of all. in a medium bowl mix together the mint, lemon, and minced garlic. Set aside.
  • Second, in a large pot add the 3/4 cup oil, add largely cubed potatoes and sauté them on medium-high until golden brown. Remove them and set aside.
  • Then, in the same pot with the remaining oil in it, add your chicken of choice, season on each side with salt and black pepper. Sear on medium high heat for about 4 minutes on each side.
  • Moreover, add 12 cups of water to the pot of seared chicken, add the 2 small cubed potatoes. Pour in half of the lemon and mint mix we have set aside. Bring pot to a boil then on on low heat for 35-40 minutes.  Mash down the small potatoes to thicken up the broth.
  • Finally, add in the largely cubed potatoes and the remaining mixture of mint, lemon, and garlic. Add salt and pepper to taste. Enjoy with a side of white rice!

Notes

You can use any part of the chicken you're in the mood for. It works great with chicken still on the bone because it gives the broth a little more flavor and thickness.
But, you can opt to use boneless chicken breast or thigh and tweak flavors to your liking.
If you want to kick up the flavors a notch or two, you can add fresh mint right over your plate. You could also roast your garlic ahead of time and add it to the stew for more flavor.
