Skillet-Sautéed Potatoes and Onions
Browned potatoes and onions that are easy to make and can be served in many different ways!
- 4 medium potatoes cubed largely
- 2 medium onions julienne
- 2 large peppers julienne
- 2 large tomatoes cubed
- ½ cup water
- ¼ cup olive oil
- 1 bouillon cube
- salt and pepper to taste
In a large skillet on medium-high heat, add olive oil and the cubed potatoes. Cover and gently stir until golden brown, about 6 minutes.
Add in the onions and green peppers and let simmer for another 2-3 minutes.
Then add in the cubed tomatoes, bouillon cube, salt and pepper. Mix, cover, and simmer for 10 minutes.
