Soft And Chewy Oatmeal Raisin Cookies

Ingredients

  • 1 ¼ cup all purpose flour or oat flour
  • 2 teaspoons ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup coconut oil
  • ¾ cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups old fashioned rolled oats
  • 1 cup raisins

Instructions

  • Preheat the oven to 350°F. Line 1-2 large baking sheets with parchment paper. Mix together the flour, oatmeal, raisins, cinnamon, baking soda and salt, then set aside⁣⁣⁣⁣.  
  • ⁣In another bowl add the honey, coconut oil, eggs and vanilla extract. Whisk for a few minutes until fully combined. Now add them to the dry mixture, and mix.
  • Place in the fridge for 10-20 minutes (I sometimes skip this step).
  • Scoop out the cookie dough using an ice cream scooper⁣⁣⁣⁣ or a large spoon; make sure they are 2 inches apart. Bake for 12-13 minutes. Allow to cool for 10 minutes before serving. Enjoy!

Notes

If you accidentally add too much honey then the cookies will bake flat instead of fluffy as you see in the picture.  It has happened to me several times so incase you add too much honey and notice the mixture is loose, then add about 1/4 cup of flour or oat flour... more or less to bring the cookie mix to a thicker consistency which will result in fluffier cookies.
 

Tips for The Yummiest Oatmeal Raisin Cookies!

Tip 1: Substitute your all-purpose white flour with oat flour if you want to try a healthier take on this Oatmeal Raisins Cookies recipe. You can also pass on purchasing oat flour and make your own by pulsing 2-3 cups of oats in a food processor or a Vitamix for a few minutes.
Tip 2: Use consistent size scoops if you want your cookies to look as good as they taste. I'd stay a tablespoon size scoop should do the trick!

Tip 3: If you make more batches than you need, then simply freeze them! Place your cookie dough on a baking sheet, flatten them out a bit, then pop them in the freezer for a couple of hours. Once they are slightly frozen through, take them off the sheet and place them in tight zip bags.
Tip 4: If you want your raisins to be more plum and soft, you can soak them in warm water for about 10 minutes. Blot using a paper towel before adding them in.
