Vegan Banana Blender Pancakes

These Vegan Banana Blender Pancakes are super easy to make, super tasty to enjoy. They are a guilt-free food. Mix the ingredients and pour the batter. Boom! They are ready!

Ingredients

  • 2 large bananas
  • cup almond milk
  • cups old fashioned oats
  • 1 tablespoon baking power
  • teaspoons pure vanilla extract

Instructions

  • Place all ingredients in a blender and mix.
  • Meanwhile, heat a large skillet on high heat for about four minutes, then lower to low heat. 
  • Use a ladle to spoon some batter onto the pan.  Flip after a few minutes, then place on a lined plate with a paper towel. 
  • Once cooled, enjoy with honey, fruit and take it up a notch by adding your favorite whipping cream. You can keep it dairy-free by adding coconut whipping cream! ⁣

Notes

 Note 1: If you prefer pancakes a little more dense and fluffy, I recommend you add another 1-2 tablespoons of oats. Thicker consistency will make thicker fluffier pancakes.
Note 2: If you want them thinner, just add around half a cup of dairy-free milk. You will get slightly looser consistency.
Note 3: If you flip the pancake too soon, it will fall apart. If you flip it too often, it will lose the fluffy texture. So, flip each pancake once after the first side is entirely cooked.
Note 4: Be sure that the skillet has completely heated up before your start pouring the batter. Do not forget to lower the heat so the inside of the pancake gets cooked. You want them to cook properly without burning the outside.
Note 5: When choosing the banana for this recipe, add those ripe ones that are left over the counter. They will give an extra subtle sweetness to the pancake.
