Chocolate Parfait Fluff

A perfect pick me up healthy breakfast ON THE GO!  Make it ahead of time and you are golden!  Top it with your favorite fruit, granola, and plant based seeds like chia, flax, or pumpkin.

Ingredients

  • 1 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ¼ tablespoons cacao
  • 3 tablespoons honey
  • ½ cup granola + chia seed + hempseed toppings

Toppings

  • Fruit of choice like strawberries, mango, berries

Instructions

  • In a bowl, add the greek yogurt, vanilla, cacao, honey then whisk until fluffy.  Fold in the granola.  Makes 2 servings!  Top with your favorite fruit, more granola and a sprinkle of chia seed

Whisk in one circular motion at a semi-quick to quick pace. The more you can whisk, the fluffier the parfait.
Use dark chocolate with at least 55% cocoa for a heavier chocolatey result. Add a teaspoon of coffee into the mix if you want a caffeine fix with your dessert.
Don't leave your parfait at room temperature. Cover the bowl with plastic bags and store it in the refrigerator for up to 5-6 days.
Mix the ingredients in a medium mixing bowl. Then, you can layer your chocolate parfait fluff in a small bowl for serving. You can also prepare it in mason jars for individual servings or to take them to work or on a picnic.
