Chocolate Chip Banana Bread

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 ripe bananas mashed
  • 1 tablespoon milk
  • 1 teaspoon cinnamon ground
  • ½ cup butter or ghee or coconut oil softened
  • 1 cup sugar coconut or date sugar
  • 2 eggs
  • 1 cup semi sweet chocolate chips

Instructions

  • Preheat oven to 325 F, and grease a 9x5-inch loaf pan.
  • Mix flour, baking powder, baking soda, and salt in a bowl. In another bowl, mash the ripe bananas, then add the melted coconut oil (or butter), sugar, eggs, milk, and cinnamon, and mix until fluffy. 
  • Slowly add in the dry mixture, and mix until well incorporated. Fold in the chocolate chips until just combined. Pour batter into prepared loaf pan. 
  • Bake for about 70 minutes or until done. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing

Notes

Tips for Foolproof Results!
  1. It is okay if your batter is a little thick and lumpy. Don't be tempted to add any liquid to the batter!
  2. Make sure you stick to the measurement mentioned in the recipe card below. Adding too much flour for example may result in a dry cake.
  3. Don't overmix your batter! Overmixing your batter mix doesn't mean a raise because you are dealing with a heavy batter. This will only result in a gummy Banana Bread.
  4. Make sure your coconut oil is softened. If it is in liquid form then use as is.
