- 5 tomatoes largely cubed
- 6 gloves garlic peeled
- 4 jalapeño peppers
- 5 tbsp. olive oil divided
- 1½ lemon
- 1 tbsp. crushed red peppers optional
- 1 tsp. salt
Preheat oven to 450°F.
Add all the vegetables to a large pan and cover them with an aluminum foil.
Place some olive oil on the aluminum foil, then add the cubed tomatoes, whole peeled garlic cloves, and jalapeños or Shishido peppers. Close the aluminum foil so that the juice of the tomatoes does not seep out.
Place in the oven for 45 minutes. Remove, then empty the cooked vegetables into a large bowl and mash using a potato masher.
Add 3 tablespoons of olive oil, lemon juice, salt, crushed red pepper (optional) and mix well.
Feel free to grill the vegetables instead of baking them.
Use a blender for a smoother texture and a chunks-free sauce
Add some sauce to soups and stews.
Measure and add vinegar or brown sugar for a sweeter, tangier taste.
Be creative with your twists, like adding fruits to the sauce.
