Ingredients

  • ¼ cup olive oil
  • ¼ cup water
  • 4 lbs fresh tomatoes, peeled and chopped or 3 (28 oz) cans crushed tomatoes
  • 1 large onion chopped
  • 5 garlic cloves minced
  • 1 teaspoon garlic powder
  • ½ teaspoon sugar or maple syrup
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1 tablespoon dried parsley
  • ½ tablespoon salt

Instructions

  • In a large pot, add the olive oil over medium heat and sauté the chopped onions for about 2-3 minutes. Add the crushed minced garlic, stirring consistently.
  • Add the peeled and cubed (medium cubed) tomatoes, or cans of crushed tomatoes, water, sugar, dried basil, dried oregano, dried parsley, and salt to taste.
  • Bring to a quick boil then reduce the heat and keep on low for 10 minutes. Be sure to stir every 2 minutes. Add more water for a looser consistency.
  • Taste and add more salt if needed. Sprinkle some crushed red pepper if you like.

Tips for The Best Homemade Pasta Sauce
  1. Feel free to enhance the sauce by stirring in some additional spices and herbs like red pepper flakes, fresh basil, bay leaf, and black pepper; or even freshly grated parmesan cheese at the end of cooking.
  2. Consider adding a little bit of butter at room temperature. This will help cut through the acidity of the tomatoes, and gives your thick sauce a nice creamy texture and extra flavor.
  3. Did you know that adding 1-2 carrots to the mix will get you a long way? Finely grated carrots thicken the sauce and add natural sweetness to the whole thing. Give it a try!
