- ¼ cup olive oil
- ¼ cup water
- 4 lbs fresh tomatoes, peeled and chopped or 3 (28 oz) cans crushed tomatoes
- 1 large onion chopped
- 5 garlic cloves minced
- 1 teaspoon garlic powder
- ½ teaspoon sugar or maple syrup
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1 tablespoon dried parsley
- ½ tablespoon salt
In a large pot, add the olive oil over medium heat and sauté the chopped onions for about 2-3 minutes. Add the crushed minced garlic, stirring consistently.
Add the peeled and cubed (medium cubed) tomatoes, or cans of crushed tomatoes, water, sugar, dried basil, dried oregano, dried parsley, and salt to taste.
Bring to a quick boil then reduce the heat and keep on low for 10 minutes. Be sure to stir every 2 minutes. Add more water for a looser consistency.
Taste and add more salt if needed. Sprinkle some crushed red pepper if you like.
