Avocado Date Pudding

- 2 Ripe avocados
- 2 Ripe bananas
- 2 Medjool dates pitted
- ¾–1 cup Unsweetened almond milk adjust for pudding-like texture
Optional
- ½ teaspoon Vanilla extract
- Pinch of cinnamon
- 1–2 tablespoons Cocoa powder for a chocolate version
Scoop the avocado flesh into a blender or food processor.
Add the banana, dates, and ¾ cup almond milk.
Blend until smooth and creamy.
If needed, add up to ¼ cup more almond milk until it’s thick yet spoonable like pudding.
Taste and adjust sweetness if desired.
Chill for at least 30 minutes before serving.
Use ripe avocados: Make sure the avocados are perfectly ripe for a creamy, rich base.
Soften the dates: The dates should be soft. If the dates are firm or dry, soak them in warm water for 5–10 minutes before blending for a smoother blend.
Adjust the texture: Start with ¾ cup almond milk, then add more as needed to reach your desired consistency.
Chill for the best results: Let the pudding sit in the fridge for at least 30 minutes before serving for a thicker, pudding-like texture.
