- ¾ cup Greek yogurt
- 1 Banana, large
- 3 Dates, large
- 1-2 tablespoons Butter, unsulted
- ⅛ teaspoon Cinnamon, ground
- ⅛ teaspoon vanilla extract
- 5 tablespoons Water
- 1 tablespoon Pumpkin seeds for garnish
Directions
Add the Greek yogurt to a shallow bowl or plate and stir in the vanilla extract. Set aside.In a skillet over medium-high heat, melt the butter. Add the chopped dates, sliced banana, water, and a sprinkle of cinnamon if using.
Cook for about 2–3 minutes, stirring frequently, until the bananas soften and the dates become jammy and caramelized. Use the back of a wooden spoon to gently mash the mixture to your desired consistency. For a looser texture, add a little more water as needed.
Spoon the warm banana date mixture over the Greek yogurt and garnish with pumpkin seeds before serving.
