Creamy Chocolate Chia Seed Pudding (Easy & Healthy Recipe)

Ingredients

  • ¼ cup Chia seeds
  • 1 cup Milk
  • ¼ cuo Greek yogurt
  • 2 tablespoons Cocoa powder
  • 2-3 tablespoons Honey or maple syrup
  • ½ teaspoon Vanilla extract
  • Small pinch of salt

Instructions

  • In a large bowl, whisk together the milk, Greek yogurt, cocoa powder, honey, vanilla extract, and salt until smooth and fully combined.
  • Add the chia seeds and whisk well to evenly distribute them throughout the mixture.
  • Let the mixture rest for 10 minutes, then whisk again thoroughly to break up any clumps.
  • Cover and refrigerate for at least 4 hours, or preferably overnight, until thick and pudding-like.
  • Stir before serving and enjoy as is, or top with Greek yogurt, fresh fruit, chocolate chips, or a dusting of cocoa powder.

  • For the creamiest texture, refrigerate the pudding overnight. This allows the chia seeds to fully absorb the liquid and thicken properly.
  • Be sure to stir the mixture again after 10 minutes to prevent the chia seeds from clumping together.
  • Adjust the sweetness to your liking by using anywhere from ½ to ¾ cup honey.
  • Regular milk, almond milk, or coconut milk all work well in this recipe.
  • Greek yogurt adds extra protein and creaminess, but a dairy-free Greek-style yogurt can be used for a vegan version.
  • If the pudding becomes too thick after chilling, stir in a splash of milk until your desired consistency is reached.
  • Store in an airtight container in the refrigerator for up to 5 days, making it perfect for meal prep.
  • Top with fresh berries, sliced bananas, chopped nuts, coconut flakes, chocolate chips, or an extra dollop of Greek yogurt before serving.
