- 2½ pounds Chicken breast about 3 breasts
- ⅓ cup Olive oil
- 1 tablespoon Italian seasoning blend
- 1 teaspoon Garlic powder
- ½ teaspoon Cumin
- ½ teaspoon Sumac
- 1 teaspoon Paprika
- 1 teaspoon Dried oregano
- 1 teaspoon Salt light or to taste
- ½ teaspoon Crushed black pepper
Prepare the Marinade
Wash the chicken breasts, then pat them dry with paper towels. Trim away any excess fat.
If the breasts are very thick, slice them in half lengthwise so they cook more evenly.
In a large bowl, whisk together olive oil, Italian seasoning blend, garlic powder, cumin, sumac, paprika, dried oregano, salt, and black pepper.
Add the chicken breasts to the bowl and coat well, using your hands or a spoon to ensure the marinade covers every piece.
You can cook immediately, or cover and refrigerate for at least 30 minutes (up to overnight) for a deeper flavor.
Grill Method
Preheat grill to medium-high heat, for about 375–400°F.
Grill chicken breasts for 6–7minutes per side, or until nicely charred and fully cooked.
Oven-Baked Method
Preheat oven to 400°F.
Place marinated chicken breasts on a baking sheet lined with parchment or foil.
Bake uncovered for 20–25 minutes, depending on thickness, until the internal temperature reaches 165°F.
Pan-Seared Method
Heat a large skillet or grill pan over medium-high heat. Add a drizzle of olive oil.
Sear chicken breasts for 5–7minutes per side, until golden brown and cooked through.
Slice or pound breasts: If the chicken breasts are very thick, slice them in half or pound them to an even thickness. This keeps them juicy and guarantees even cooking.
Don’t skip the marinating time: Even 30 minutes helps the chicken absorb flavor and stay tender. For the optimal flavor, marinate overnight.
Preheat your cooking appliance: Whether using an air fryer, oven, or grill, preheating helps sear the outside quickly, locking in moisture.
Check for doneness: Use a meat thermometer to measure the internal temperature; it should reach 165°F. This prevents overcooking and dryness.
Let it rest before slicing: Allow the chicken to rest for about 5 minutes after cooking. This helps the juices redistribute for a tender, juicy bite.
Slice against the grain: The chicken is more tender and easier to chew when it is cut against the grain.
