Ingredients

  • 2 packages Tea biscuits
  • 1 teaspoon vanilla extract
  • 1 can sweetened condensed milk (14 ounces)
  • ½ cup unsweetened cocoa powder (cacao)
  • 2 tablespoons instant coffee or Nescafe (optional, for a coffee flavor)

Instructions

  • In a large bowl, combine the cocoa powder, sweetened condensed milk, melted butter, vanilla extract, and instant coffee/Nescafe (if using). Mix them together until well combined.
  • Break the Tea biscuits into small pieces and add them to the bowl. Mix everything together until the biscuits are evenly coated with the chocolate mixture.
  • Lay a sheet of plastic wrap on a flat surface. Transfer the mixture onto the plastic wrap and shape it into a log by rolling and pressing it firmly. Wrap the log tightly in the plastic wrap.
  • Place the wrapped login the freezer for at least 2-3 hours, or until firm.
  • Once the cake has hardened, remove it from the freezer and unwrap the plastic wrap.
  • Slice the cake into desired thickness and serve. It can be enjoyed as is or garnished with powdered sugar, cocoa powder, or chocolate shavings.

Notes

Tips for Perfect Results
  • It is important to taste the chocolate mixture before adding the biscuits. If it is too sweet, add some cocoa powder; but if it is not sweet enough, then drop in some condensed milk.
  • Don't crush the biscuits too finely. You just need to roughly chop them to get large chunks.
  • Use a bread knife to cut the lazy cake into clean slices.
  • The cake can be stored in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months. The addition of instant coffee or Nescafe will give the cake a coffee flavor. Feel free to omit it if you prefer a plain chocolate flavor.
