- 4 ounces Chicken or beef kabobs
- ½ cup Hummus
- ½ cup White vermicelli rice
- ¼ cup Heirloom tomatoes cubed
- ⅓ cup Cucumbers sliced
- ¼ cup Pickled beets
- 3 tablespoons Feta crumbled
- ⅓ cup Parsley finely chopped
- 2 tablespoons Red onions sliced
- I used frozen chicken kabobs but you can use any protein that matches med style.
- Make sure to use fresh vegetables and ingredients for the best result.
- Just add a drizzle of olive oil on top instead of heavy dressing, for hummus dip is already rich enough on its own.
