Mexican Street Corn (Elote)

Elote, or Mexican street corn, is grilled corn slathered in creamy, cheesy, irresistible goodness! Imagine juicy corn smothered in creamy garlic mayo, zesty lime juice, spicy chili powder, and topped with crumbled cheese and fresh cilantro. Ingredients

  • 2 15 ounce cans Sweet corn drained - or 4 ears fresh corn, husked
  • 2 tablespoons Extra virgin olive oil or melted butter
  • 3 tablespoons Avocado mayo or mayo of choice
  • 1 Garlic clove minced
  • 1 Lime juice
  • cup Chopped scallions optional
  • ½ cup Feta cheese crumbled
  • ¼ teaspoon Chili powder
  • ¼ cup Cilantro finely chopped
  • ¼ teaspoon Smoked Paprika
  • 1 Jalapeño pepper diced
  • Salt to taste

Instructions

  • Heat a medium skillet then lower to medium heat. Add olive oil or butter.
  • Pour in the drained corn or husked corn and sauté for 5-7 minutes or until golden and slightly toasted.
  • Set the corn aside to cool.
  • In a medium bowl combine the mayonnaise, minced garlic, juice of one lime (you can substitute with lemon), feta cheese, chopped cilantro, smoked paprika and diced jalapeño.
  • Pour in the cooled corn and mix until well combined. Serve as a side dish, with chips, taco topping, salad topper, Burrito bowl, with bbq salmon and so many other ways.

Notes

Use Fresh Corn: Fresh corn on the cob offers the best flavor and texture. If using canned corn, ensure it's well-drained.
Grill in a Skillet: For those without a grill, use a cast-iron skillet to get that perfect char and smoky flavor.
Cheese Options: While Cotija is traditional, feta or parmesan can be great substitutes. Crumble the cheese finely for the best coverage.
Serve Immediately: Mexican street corn is best enjoyed hot, so serve it immediately for maximum flavor.
Add Extra Lime: Serve with lime wedges on the side for an extra splash of zesty freshness.
Experiment with Toppings: Try adding a sprinkle of Tajín, a dash of smoked paprika, or some finely chopped red onions for an extra flavor twist.
