Creamy Brown Lentil Dahl (Vegan & Gluten-Free)

- 3 cups brown lentil par boiled
- 1 large onion diced
- 4 gloves garlic minced
- 1 tsp ginger ground or minced
- 1 cup carrots diced
- 1 cup mixed color pepper diced
- 2 vegetable bouillon cubes
- 3½ cups water
- 1 can coconut milk 13.5 oz
- ½ teaspoon turmeric
- 1 ½ teaspoons cumin
- 1 teaspoon paprika
- 1 ½ tablespoon curry
- ½ tablespoon salt
Soak lentils in hot water in a bowl. In a pot sauté the onions for five minutes, then add the ginger, garlic, carrots and peppers, and sauté for 2 minutes.
Add the soaked and washed lentils, bouillon cubes, spices, water, coconut milk, and salt to taste. Allowed to boil for 2 minutes, and then simmer for 10 to 15 minutes.
Enjoy with a side of warm rice or quinoa. Garnish with herbs like cilantro or parsley.
