- 1 cup Self-rising flour
- 1 cup Greek yogurt (Plain)
In a bowl, combine the self-rising flour and yogurt. Mix with a spatula or in a mixer on low speed until the dough looks shaggy and crumbly.
Transfer the dough to a lightly floured surface and knead for 3–5 minutes until smooth, soft, and elastic.
Place the dough in a bowl, cover tightly with plastic wrap, and let it rest at room temperature for 15–20 minutes. This helps relax the dough iso it is easier to shape.
You have to place the dough in a bowl and wrap it with saran paper for later use or use it on the spot.
For Mini Pizza
Bake at 450°F for 5–6 minutes, remove, add your sauce and toppings, then bake again for 6–8 minutes until golden and bubbly.
For Manakeesh (cheese or za’atar)
#1: If the dough is too sticky, add some flour and knead it well. It needs to be a bit sticky though.
#2: Make sure to spread some flour on the counter where you spread the dough.
#3: If you do not have self-rising flour on hand, you should not worry. You can do it yourself! Add 1/4 teaspoon salt and one cup of baking soda to one cup of all-purpose flour. And here it is!
#4: Let the dough rest in the fridge for some time. It will be easier to manipulate it if you do so.
#5: Use cooking spray or olive oil if you are using this dough in a pan or a tray.
#6: If too dry, add 1–2 teaspoons of yogurt.
