Ingredients

  • 2 cups heavy cream, fresh cream, or double cream.
  • ½ teaspoon salt optional

Instructions

  • Pour the heavy cream in a bowl of stand mixer and start by whipping the cream at medium speed.
  • When the cream begins to thicken, accelerate the speed to medium-high.
  • When it becomes rough. The cream will eventually seperate after 5 minutes, and when the butter and buttermilk are completely seperated save the liquid (buttermilk) and place the butter in a mesh seive.
  • Squeeze the butter tightly with your hands to remove the excess buttermilk, then place the butter in a bowl filled with ice-cold water to further drain it from buttermilk residue.
  • Repeat the process until the water is clear.
  • If you want salted butter, then you can add a pinch of salt before placing it in an air-tight container and storing it in the fridge.

Notes

  • Use ice-cold water to rinse the butter.
  • You must make sure that the cream you are using for the butter is at room temperature. It makes it faster for the butter to seperate from the buttermilk.
  • Squeeze and knead the butter to make sure that you fully drained it from excess buttermilk.
  • If you want to store the butter, then you should rinse it completely from buttermilk using cold water to prevent it from turning rancid.
  • Save the fresh buttermilk, it will keep well in the fridge. You can use it later in other recipes.
