- 1 medium red onion
- ½ cup water
- ¼ cup white vinegar
- ¼ cup apple cider vinegar
- 1½ teaspoon maple syrup or honey
- 1½ teaspoon fine salt
- ¼ teaspoon pepper flakes
Cut onions into thin slices and place them in a jar.
Add the water, salt,maple syrup or honey, vinegar, and pepper flakes in a pan and bring to a boil.
Pour the mixture that was boiled over the onions in the jar.
Leave the onions to cool down at room temperature.
Cover the onions with the lid and put them in the fridge.

Cut onions into small-sized rings. This helps the onions to absorb the vinegar as it can sit overnight and let all flavors soak in.

Go for more than one type of vinegar. You can go for regular white vinegar but make it more interesting by adding apple cider vinegar. This makes flavors different and unique.
