Ingredients

  • 6 Tablespoons butter
  • 2 Tablespoons olive oil
  • 1 chopped onion medium
  • cup flour
  • 4 cups broccoli
  • 1 8 oz can mushroom
  • 3 bouillon cubes
  • 7 cups milk or heavy cream
  • 1 Teaspoon salt
  • ¼ Teaspoon pepper

Instructions

  • In a small saucepan over low heat, melt the butter, add the olive oil. Then add in the flour and stir until well blended (do not brown). Remove from heat and set aside.
  • In a medium pot add 2 tablespoons of olive oil, add the onions and begin to sauté until tender. Now, add in the chopped broccoli florets to cook for about 6 minutes, gently stirring occasionally.
  • Now add in the mushroom, milk, and bouillon cubes. Increase the heat at this point and bring to a boil, then lower back to medium heat. While whisking constantly, add the flour mixture. Cook and stir until soup is thickened and bubbly.
  • Add in salt and pepper. Enjoy warm!
