Ingredients

  • 1 cup All-purpose flour
  • teaspoons Baking powder
  • 2 tablespoons Honey or sugar, maple syrup
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter or olive oil
  • ½ cup Milk or milk of choice
  • pinch of salt

Instructions

  • In a mixing bowl, whisk together flour, baking powder, and salt.
  • Add in the eggs, vanilla extract, honey, butter and milk, then stir until the batter is just combined. Don’t over mix.
  • Let the batter rest for 5 minutes to create even fluffier pancakes since it contains baking powder. But if you’re short on time, you can cook them right away.
  • Lightly spray a nonstick pan with oil spray and preheat it until hot.
  • Once the pan is hot, lower the heat to medium-low (about level 4).
  • Pour the batter into the pan to make small pancakes. Cook for 1–2 minutes, until bubbles form on top and the edges look set.
  • Flip and cook the other side until golden and fluffy.
  • Serve warm and enjoy.

Notes

Avoid overmixing the Batter: Mix just until the ingredients are combined. Overmixing can make your pancakes dense rather than fluffy.
Rest the Batter: Before cooking, let the batter sit for 5 minutes. This helps the baking powder activate for extra fluffiness.
Preheat the Pan: Before adding the batter, heat the pan completely. Then, reduce the heat to medium-low to prevent burning while the batter cooks.
Flip at the Right Time: Wait until bubbles appear on the surface and the edges look set before flipping.
Even Cooking: Avoid pressing down on the pancakes while cooking, as they become flattened and less airy.
Test with the First Pancake: Use the first pancake to check heat and consistency, then make any necessary adjustments.
