- 1 cup All-purpose flour
- 1½ teaspoons Baking powder
- 2 tablespoons Honey or sugar, maple syrup
- 2 Eggs
- 1 teaspoon Vanilla extract
- 2 tablespoons Unsalted butter or olive oil
- ½ cup Milk or milk of choice
- pinch of salt
In a mixing bowl, whisk together flour, baking powder, and salt.
Add in the eggs, vanilla extract, honey, butter and milk, then stir until the batter is just combined. Don’t over mix.
Let the batter rest for 5 minutes to create even fluffier pancakes since it contains baking powder. But if you’re short on time, you can cook them right away.
Lightly spray a nonstick pan with oil spray and preheat it until hot.
Once the pan is hot, lower the heat to medium-low (about level 4).
Pour the batter into the pan to make small pancakes. Cook for 1–2 minutes, until bubbles form on top and the edges look set.
Flip and cook the other side until golden and fluffy.
Serve warm and enjoy.
Avoid overmixing the Batter: Mix just until the ingredients are combined. Overmixing can make your pancakes dense rather than fluffy.
Rest the Batter: Before cooking, let the batter sit for 5 minutes. This helps the baking powder activate for extra fluffiness.
Preheat the Pan: Before adding the batter, heat the pan completely. Then, reduce the heat to medium-low to prevent burning while the batter cooks.
Flip at the Right Time: Wait until bubbles appear on the surface and the edges look set before flipping.
Even Cooking: Avoid pressing down on the pancakes while cooking, as they become flattened and less airy.
